The intense flavors of spicy jalapeño, onion and chunky salsa demand a high acid white preferably one with some residual sugar. The slight sweetness of an off-dry riesling tempers the spicy heat of the nachos while the high acid refreshes your taste buds for another bite.
My first choice for this pairing would be Love and Squalor’s Willamette Valley Riesling. $20
